Ti Kwan Yin (Goddess of Mercy)
Ti Kwan Yin is one of China’s most famous oolong teas. Legend says a single shoot of this magnificent tea was given by the goddess of mercy to a farmer selflessly caring for a crumbling temple. These balled up forest and light green leaves produce a bright yellow cup with notes of dried fruit. Contains caffeine.
Beyond the Cup
Recipe: Cheese and Cracker Pairing
Ti Kwan Yin’s fruity notes creates an exceptional appetizer pairing with cheese and crackers. The silky mouthfeel of the tea and the creaminess of the cheese produces a delicious and conversation worthy start to any dinner party.
Adventure: Tea Tasting
Ti Kwan Yin’s complexity and re-steeping ability make it a great tea for a tea tasting. Whether you’re tasting with a group or by yourself, tea tastings are about taking time to enjoy all aspects of the tea and really noticing its characteristics. Pause to document (on paper or in your mind):
The smell and look of the dry leaves as you unwrap them from the package.
The smell and look of the wet leaves after each steep: How do they change after each brew?
The smell and taste of the tea broth: What is the first flavor you notice? Do other flavors emerge over time? What flavor is left in your mouth?
Lastly, notice the mouthfeel that remains: Is it cool and dry, silky or neutral?
Just remember there are no right answers in a tea tasting as everyone’s taste buds are different so you may notice flavors that others don’t and vice versa.
