Banana Tea Muffin
Ingredients:
3 tablespoons Lagom Infusions Jasmine Pearl Green Tea
1 cup sugar
1/3 cup butter
2 eggs
3 ripe bananas
2/3 cup water
1 2/3 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
Instructions
Preheat oven to 350.
Steep jasmine green tea in 2/3 cup of hot water (just below boiling, about 195 degrees) for 15 minutes.
Mix together sugar, butter, eggs, and bananas.
Strain tea leaves to separate from water. Add 1/3 cup of water (discarding the rest) and a handful of tea leaves to the banana mixture. Stir to combine.
Add flour, baking soda, salt, and baking powder.
Pour batter into greased muffin tins. Cook for 25 minutes.
