Banana Tea Muffin

  1. Preheat oven to 350.

  2. Steep jasmine green tea in 2/3 cup of hot water (just below boiling, about 195 degrees) for 15 minutes.

  3. Mix together sugar, butter, eggs, and bananas.

  4. Strain tea leaves to separate from water. Add 1/3 cup of water (discarding the rest) and a handful of tea leaves to the banana mixture. Stir to combine.

  5. Add flour, baking soda, salt, and baking powder.

  6. Pour batter into greased muffin tins. Cook for 25 minutes.
